Gyudon

This dish makes me nostalgic for Japan! - Megan

4 servings - 30 minutes

Ingredients

  • Neutral oil
  • 2 medium onions
  • 1 lb ver thinly sliced beef (like fatty beef chuck or ribeye)
  • 2 tsp sugar
  • 2 tbsp mirin
  • 2 tbsp soy sauce
  • 1 cup dashi stock
  • 1 scallion
  • toasted sesame seeds, for garnish
  • (optional) fried eggs, for serving

Recipe

Prep

  • Thinly slice the onions along the grain to preserve structure.
  • Finely chop the scallion and set aside.

Cooking

  • Heat the neutral oil in a large skillet over medium high heat, and cook the sliced onions for about 10 minutes, stirring often.
  • Add the beef and sugar, and cook until the beef is slightly browned. Add the mirin, soy sauce, and stock (start with 1/2 a cup of stock and add more as needed). Bring to a simmer, and cook for about 10-15 minutes to reduce the stock into a thin sauce. Taste for seasoning, and add a little more soy sauce if needed.
  • While the beef is simmering, in a separate skillet, fry an egg for each serving as desired.
  • Garnish with sesame seeds and scallions. Serve with steamed rice and a fried egg, if desired.
