Shepherd's Pie

A hearty and warming pie for the cold months.

1 Whole Pie - 2 hrs or so

Ingredients

For Mashed Potatoes

  • 1 1/2 pounds russet potatoes
  • 1/4 cup half-and-half
  • 2 oz unsalted butter
  • 3/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 egg yolk

For Filling

  • 2 tbsp canola oil
  • 1 cup chopped onion
  • 2 carrots, peels and diced
  • 2 cloves garlic, minced
  • 1 1/2 lbs ground turkey
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 2 tbsp all-purpose flour
  • 2 tsp tomato paste
  • 1 cup chicken broth
  • 1 tsp Worcestershire sauce
  • 2 tsp chopped rosemary
  • 1 tsp chopped thyme
  • 1/4 cup corn kernels
  • 1/2 cup english peas
  • 1 pie crust - see source below.

Recipe

Prep

  • Par-bake pie crust
  • Chop onion
  • Peel Carrots
  • Peel Garlic and mince it
  • Chop herbs
  • Peel potatoes and cut into 1/2-inch dice.

Cooking

  • Set potatoes into medium sauce pan and cover with cold water. Bring to a boil, then uncover and maintain a simmer, cooking until tender and easily crushed with a fork or tongs about 10-15 mins.
  • Meanwhile, melt butter with half-and-half in the microwave about 35 secs.
  • Drain the potatoes in a colander and then return to the saucepan. Mash them and then add salt and papper, butter, and half-and-half. Stir in the yolk
  • Preheat the oven to 400 degrees F.
  • While cooking the potatoes, mix up the filling. Place the oil into a saute pan over medium heat. Once shimmering, add the onion and carrots and saute until they begin to color, about 4 mins. Add the garlic and stir to combine. Add the turkey, salt, and pepper and cook until browned and cooked through, about 3 mins.
  • Sprinkle the meat with the flour and toss to coat, continuing to cook for another minute. Add the tomato paste, chicken broth, Worcestershire sauce, rosemary, thyme, and stir to combine. Bring to a boil, reduce the heat to low, cover and simmer slowly 10 to 12 minutes or until the sauce is thickened slightly.
  • Add the corn and peas to the turkey mixture and spread evenly into the parbaked pie crust. Top for the mashed potatoes, sealing in the mixture all around the crust. Place the pie crust on a baking sheet and bake for 25 minutes or until the potatoes start to brown. Remove and let cool for about 15 mins
